Coconutting



After disemboweling my first coconut by hand with my husband's help, I have developed a great respect for those folks who get out their machetes, knives and hammers to do this every day.

Next up: homemade coconut butter!

Thanks for commenting. Blogging is one of those peculiar things where you think you're alone with your personal hurdles and suddenly there are all these people with similar experiences sharing what they know, too.

Let's see, tomatoes, avocados and eggs...definitely doable. We had to cut out eggs a few months ago for Little Moo and although she loves them so much, I found other binders that work quite well.

I found that custard-like foods get nice and thick, or even solid with beef gelatin (it has no taste, so also works for sweet foods). I tend to use guar gum in baked things. It makes the dough or batter very thick right away. I think about 1/2 ts for a small bread or cake seems about right. If he doesn't have a problem with corn, xanthan gum works similarly to guar gum.

I like this for breakfast - pop in a blender:
cooked winter squash
a few pieces of banana or dried fruit
a few spoons of nut butter
cinnamon if it's something he likes

It's yummy just like that, or you can add coconut or dairy milk to make it more like a shake, or warm the milk in a double boiler, add a teaspoon or two of gelatin and melt well, then blend the milk into the squash, pour into custard cups and chill until set for a pudding.
